Date Pudding
Ingredients
3 eggs
1 cup sugar
4 tbsp. flour
1 tsp. baking powder
pinch of salt
2 1/2 cups dates (pitted)
1 cup nuts (chopped)
whipping cream (or Cool Whip)
Directions
Heat oven to 350 degrees. Prepare 9 x 9 x 2 baking pan by greasing it. Beat
eggs, add sugar gradually until thick. Mix in flour baking powder and salt.
Stir in chopped dates and nuts. Pour into pan and bake for approximately 30
minutes. Serve with whipped cream or dessert topping. May place a fruit leaf
on top and garnish with cherry, apricot or another colorful garnish, or even
chopped nuts. Can be served warm or cold.
