Diet Date Dessert
Ingredients
1 envelope plain gelatin
1 1/2 cups water
1 cup dates (pitted, snipped)
2 tbsp. frozen orange juice concentrate (thawed)
2 tsp. lemon juice
1/2 tsp almond extract
4 egg whites (room temperature)
2 tbsp. toasted almonds (sliced)
Directions
In a saucepan, sprinkle gelatin over water; add dates. Bring to a boiling
and cook 10 minutes, uncovered or till thickened stirring occasionally. Remove
from heat; stir in juices and extract. Cool to lukewarm; refrigerate until
mixture mounds. Beat egg whites stiff but not dry. Fold date mixture into
egg whites. Spoon into four dessert glasses. Chill at least one hour. Sprinkle
with almonds. (4 servings, about 160 calories each).
