Double Date Cake
Serving Size

Ingredients
1 1/2 cups boiling water
1 cup pitted dates (cut up)
1 tsp. baking soda
1/4 cup butter (or margarine)
1 egg (beaten)
1/2 tsp. salt
1 tsp. vanilla
1 cup sugar
1 1/2 cups flour (sifted)
1 tsp. baking powder
date topping (see following recipe)
Directions
Combine boiling water, dates, baking soda, and butter. Let stand while mixing
remainder of the cake. To egg, add salt and vanilla. Beat to mix. Combine
sugar and flour sifted with the baking powder. Alternately add dry ingredients
with the date mixture to the egg, beating after each addition, batter is thin.
Bake in greased 13 x 19 x 2 pan, moderate oven (350 degrees) 35-40 minutes.
Cool on rack. Spread with date topping.
Date Topping
Ingredients
1 cup dates (cut up, pitted)
3/4 cup water
3/4 cup sugar
1/8 tsp. salt
1/2 cup walnuts (chopped)
1/4 tsp. cinnamon
Directions
Comine all ingredients (except nuts). Cook until smooth, stirring constantly
about 10 minutes. Add nuts. Spread on top of cooled cake.
